Green Coffee Beans


The unroasted seed inside the coffee cherry is commonly referred to as the "Green Bean". Although available in a "French" style, the seeds are part of the Rubiaceae family and are not Leguminosae. The coffee plant, a smooth woody evergreen with broad leathery leaves, produces cherries along their branches. Typically there are two seeds found in each of these cherries. Sometimes only one seed is produced and is called a peaberry.
